The founder
Hello, I'm Ruby
I've spent my career developing food. I founded byRuby, which was later acquired by Charlie Bigham’s. Since then I've created products for retail brands and bakeries, and I teach food product development at Leiths.
Beloved Bites is where all of that comes together. It's confectionery that feels indulgent but is made with ingredients I'm proud of.
Why marshmallows
A sweet worth choosing
Most marshmallows are an afterthought: very sweet, very soft and not much else. I wanted to make one you'd choose on purpose, built around real ingredients and finished in chocolate.
